Spicy Paleo Sweet Potato Bisque Recipe
I have spent the last few weeks perfecting this Paleo Sweet Potato Bisque recipe and the most recent batch I made was by far the best one yet!
This is a super easy soup to throw together and is so convenient to have in the fridge when you want something to eat but don't feel like cooking. If you would rather yours not be spicy, keep out the cayenne - it will still be delicious!
Spicy Paleo Sweet Potato Bisque Recipe
Ingredients:
3 large organic sweet potatoes, peeled and loosely chopped
1/4 white or sweet onion, chopped
1 quart unsalted organic vegetable broth
1 can of full-fat coconut milk
1 inch knob of ginger, grated
2 tablespoons nutritional yeast
1 tsp curry powder
1 tsp garlic powder
sprinkle of cayenne (omit to remove spiciness)
sea salt to taste
Instructions:
Combine sweet potatoes, onion and vegetable broth into a large pot.
Bring to quick boil then cover with lid and reduce heat to low for 45 minutes or until sweet potatoes are soft.
Stir in can of coconut milk, grated ginger, nutritional yeast, curry powder, garlic and cayenne.
Cover again and simmer on low for about 20 minutes.
Transfer mixture to heat-safe blender and puree in batches until smooth. Add sea salt to taste.
Yield approx. 10 cups!
Top With:
Shredded or crumbled nut cheese
Fried egg or scrambled eggs
Avocado
Seeds (flaxseed, pepitas, etc.)
Chopped spinach
Dollop of Coconut Cream
